KayDrew Eats: Veggies Edition

We are here to compel you to break the stigma about vegetables like Brussel sprouts and broccoli, the most delicious veggies on the planet! 

Broccoli: This is Kay’s favorite vegetable on the planet! She loves to eat it oven roasted with olive oil, garlic powder, onion powder, and chili powder. We roast it until the broccoli has browned and super crunchy. It really satisfies that craving for chips or other crunchy snacks while still being a healthy choice.

Brussel Sprouts: okay bear with us! We have eaten our fair share of gross Brussel sprouts (especially when it’s frozen). But its easily one of our favorites of all time. Fresh sprouts cooked well become second to none. We like to oven roast them with onions and a balsamic drizzle.

Kale – You don’t have to make a smoothie out of kale.  Just like broccoli kale can become a crunchy treat when dealt with right. Its something we love when we can get. We roast it in the oven with a splash of olive oil and salt and pepper.

Spinach – A healthier alternative to iceberg lettuce. Spinach can be used to make an excellent salad, a great dip, or even a great ingredient in a stirfry. We like to chop it up and pan fry with onions,  mix it with cream cheese, sour cream, and cheese and bake it in an oven to make excellent chip dip.
